In Poland, the tradition of eating donuts on Shrove Thursday, then called pampuchy, dates back to the seventeenth century. Pampuchy were made of the best flour, probably wheat. However, they were not eaten sweet, as today, but sprinkled with cracklings. Bread dough was fried in deep, hot fat, usually lard. The idea was for the pampuch to be as greasy as possible. It was customary to indulge before a 40-day fast, during which only fast food was eaten.
So if the tradition has changed and today we are eating sweet donuts, why could we not make further changes?! However, only together having health benefits. So this year’s try delicious and light pumpkin following the recipe below!
Ingredients:
- 180g spelt flour
- 200g pumpkin puree (peel the pumpkin skin, cut it into cubes and steam, then blend)
- 1 egg
- 2 tbsp honey
- 60ml milk 2%
- 1/2 teaspoon baking powder
- 1/2 teaspoon soda
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- pinch of salt
First, thoroughly mix the pumpkin with egg, honey and a pinch of salt. Then, while mixing, add the flour mixed with baking powder, soda and spices. Finally, add milk and mix for several minutes.
Donuts can be baked in a special donut oven or in an ordinary oven. If baked in the oven, it is best to make small balls with a diameter of 2-3 cm and spread them on baking paper. They can also be rotated during baking to make them raise evenly and roundly. Sprinkle baked donuts with icing sugar.
